Golden and flaky, Zaban is a delicious Persian puff pastry shaped like a tongue. Shirini-e-Zaban is from the Qazvin region of Northern Iran. It is traditionally made with honey, but our vegan Persian Zaban uses agave syrup and a plant-based puff pastry.

- Agave syrup (or maple syrup) – You can get this from Amazon.
You will also need the following equipment:
- Long pill-shaped cookie cutter. You can get this from Amazon.
- Rolling pin
- Pastry brush – You can get this from Amazon.
- Parchment paper or silicone baking mat – You can get this from Amazon.
How to Make Vegan Persian Zaban
- Preheat oven to 400 F.
- Defrost the puff pastry dough.
- Place the puff pastry dough on a well-floured surface. Spread open with a rolling pin.
- Brush agave syrup on the puff pastry dough with a pastry brush.
- Cut the dough closely together using the long, pill-shaped cookie cutter.
- Make a small dent in the middle of each puff pastry (as pictured).
- Place the cut puff pastry on a baking sheet lined with parchment paper or silicone baking mat.
- Bake the puff pastry for 8-10 minutes. Lower heat to 350 F, and bake another 20-25 minutes until golden brown.
- Take the puff pastry out of the oven and brush again with agave syrup.
