Ingredients/Equipment Notes
To make this delicious Persian fried bread, you will need the following ingredients (full measurements are in the recipe card below):
- 1/2 cup plant-based yogurt (plain, unsweetened)
- 1/4 cup neutral oil (like sunflower or canola)
- small red onion, finely grated
- 1/2 cup Just Egg (optional)
- 1 Tbsp active dry yeast
- 1 tsp ground turmeric
- ½ tsp salt
- all-purpose flour
- Oil for deep frying
- Powdered sugar, for garnish
You will also need the following equipment:
- Thermometer to measure the temperature of the oil
- Wok or deep pot to fry the dough
- Dough cutter to divide the dough
- Vegetable chopper (optional to grate the onion)


How to Make the Best Gulachu
- In a large mixing bowl, combine the plant-based yogurt, oil, grated onion, Just Egg, yeast, turmeric, and salt. Stir well to blend.
- Gradually mix in the flour, starting with 2 cups and adding the remaining 3/4 cup (and more) as needed to form a soft, slightly sticky dough.
- Turn the dough out onto a floured surface and knead for about 5 minutes, until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in the oven with the oven light on for about 1 hour, or until doubled in size.
- Divide the risen dough into 14 equal pieces. Roll each piece into a ball, then flatten and roll out with a rolling pin to about ¼ inch thickness.
- Heat oil in a deep pan over medium heat to 350 F. Once the oil is hot, carefully fry the rolled dough pieces one at a time. Fry each side until golden brown and puffed, about 1–2 minutes per side.
- Remove from the oil and drain on a paper towel-lined plate.
- For the sweetened version, let cool and dust generously with powdered sugar.

How to Serve Gulachu
Gulachu is delicious savory, served with Persian dips like Kashk-e-Bademjan or with various plant-based cheeses and spreads. Gulachu is also enjoyed as a dessert. Dust it with powdered sugar, and serve with a cup of Persian tea, chaie.
