1/2cupplant-based yogurt (plain, unsweetened)
1/4cupneutral oil (like sunflower or canola)
small red onion, finely grated
1/2cupJust Egg (optional)
1 Tbsp active dry yeast
1 tsp ground turmeric
1/2 tsp salt
2 3/4cupsall-purpose flour (plus more as needed)
Oil for deep frying
Powdered sugar, for garnish
Instructions
In a large mixing bowl, combine the plant-based yogurt, oil, grated onion, Just Egg, yeast, turmeric, and salt. Stir well to blend.
Gradually mix in the flour, starting with 2 cups and adding the remaining 3/4 cup (and more) as needed to form a soft, slightly sticky dough.
Turn the dough out onto a floured surface and knead for about 5 minutes, until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in the oven with the oven light on for about 1 hour, or until doubled in size.
Divide the risen dough into 14 equal pieces. Roll each piece into a ball, then flatten and roll out with a rolling pin to about ¼ inch thickness.
Heat oil in a deep pan over medium heat to 350 F. Once the oil is hot, carefully fry the rolled dough pieces one at a time. Fry each side until golden brown and puffed, about 1–2 minutes per side.
Remove from the oil and drain on a paper towel-lined plate.
For the sweetened version, let cool and dust generously with powdered sugar.
