Kale and Brown Rice Salad with Tahini

Flavorful salad, packed with calcium and protein


Ingredients

Units Scale

Salad

  • 1 cup uncooked brown rice
  • 1 Tbsp toasted sesame oil
  • 3 cups kale, chopped
  • 1 Tbsp white sesame seeds
  • 3 mandarin oranges (cut up)

Lemon Tahini Dressing

  • 1/3 cup tahini
  • 1 medium lemon, juiced
  • 1-2 Tbsp maple syrup
  • 1 pinch sea salt
  • 1 clove garlic (minced // optional)
  • Water (to thin // ~3-6 Tbsps

Instructions

  1. Cook the brown rice according to manufacturer’s instructions. When done, let cool and set aside. 
  2. Saute kale and sesame seeds in the toasted sesame oil.
  3. Prepare Lemon Tahini Dressing.
  4. Combine rice with sautéed kale/sesame seeds. Add mandarin oranges and Lemon Tahini Dressing and toss until evenly combined.
