Salad
- 1 cup uncooked brown rice
- 1 Tbsp toasted sesame oil
- 3 cups kale, chopped
- 1 Tbsp white sesame seeds
- 3 mandarin oranges (cut up)
Lemon Tahini Dressing
- 1/3 cup tahini
- 1 medium lemon, juiced
- 1-2 Tbsp maple syrup
- 1 pinch sea salt
- 1 clove garlic (minced // optional)
- Water (to thin // ~3-6 Tbsps
Instructions
- Cook the brown rice according to manufacturer’s instructions. When done, let cool and set aside.
- Saute kale and sesame seeds in the toasted sesame oil.
- Prepare Lemon Tahini Dressing.
- Combine rice with sautéed kale/sesame seeds. Add mandarin oranges and Lemon Tahini Dressing and toss until evenly combined.
