Today is my mom’s 65th Birthday! She is the creative genius behind the vegan Persian recipes on the Plant-Based Persian blog. There would be no blog without her.
She is “the best cooker,” as my kids say.
When my husband and I got married 14 years ago, we were poor college students so my mom cooked for our wedding of 175 guests! She was still cooking up to 1 hour before the ceremony. She didn’t care about perfect hair or makeup. She cared about the food being perfect. And it was. That’s my mom. Selfless.
She is a woman brave enough to leave an unsafe marriage with a brand new baby.
She is a mother courageous enough to move to a new country with a 4 year old to raise alone.
She is a single mother who worked hard and long hours from retail to assembly lines to delivering newspapers to pay the rent and put food on the table.
She is a kind human, a selfless soul who made many sacrifices to raise me. There were no girls’ nights or kid-free vacations. There were no breaks. She never worried about dating or remarrying. She worried about raising me.
She has a heart full of love, compassion and forgiveness.
She came to this country as an immigrant, a refugee and is now a citizen of the U.S.A.
I am lucky to celebrate her today!
