I never enjoyed cooking very much until I became a vegan! It became much more exciting to try to veganize recipes and to show people how delicious vegan food can be. It is especially rewarding to cook for my children and raise them vegan. Contrary to popular opinion, you don’t need milk and meat to grow and thrive.
My kids now teach their friends where pepperoni comes from and that cows don’t just make milk. They also tell everyone at school there is no Santa Claus and the tooth fairy is just mommy. We keep it real in our house. 🙂
Someone recently asked me what my children eat for school lunch. We are a huge fan of Italian food and pasta. We love vegan Mac n Cheese, bagel pizzas, tofu Bolognese, Kitehill Foods Ravioli and Tortellini, tofu Alfredo, and of course pesto pasta. We make this pesto pasta every week for school lunch and add in steamed peas. It is easy, and I know my kids will eat their lunch! Winning!

- 2 cups fresh basil
- 1/2 cup roasted pine nuts
- 2 1/2 Tbsp. lemon juice
- 1 garlic clove
- 1/4 tsp. salt
- dash of pepper
- 1/4 cup grated vegan parmesan (I use Violife)
- 1/4 cup olive oil
- 12 oz pasta of choice
- 1 cup frozen peas
- Add all the pesto ingredients to a food processor and blend until smooth. Add more oil or water if needed to reach a thinner consistency.
- Cook pasta noodles according to package instructions.
- Steam the frozen peas.
- Combines cooked noodles, peas, and the pesto.
